Fried Green Tomatoes with Flare Free Pimento "Cheese" Recipe

This recipe is proof that anything can be made Flare Free if you have the right tools, guidance + support.


And that comfort food doesn't have to cause autoimmune flare-ups.

FRIED GREEN TOMATOES WITH FLARE FREE PIMENTO "CHEESE"


INGREDIENTS:


PIMENTO "CHEESE":

1 ⅓ c grated soy-free vegan cheddar

¼ c dairy + soy-free plain unsweetened yogurt

¼ c good quality mayo you like the taste of (vegan mayo if you can't have eggs)

½ c organic roasted red peppers, finely minced

~½ t organic smoky paprika

Sea salt and black pepper to taste


FRIED GREEN TOMATOES:

2 large organic green tomatoes, cut into ½” thick slices

2 organic pastured eggs, beaten

Good quality gluten free panko breadcrumbs

Cold pressed avocado oil

Sea salt and black pepper to taste


INSTRUCTIONS:


Mix all ingredients for pimento cheese in a bowl and season to taste with salt and pepper.


Arrange two shallow baking dishes side-by-side to set up your tomato dredging station. Season eggs and breadcrumbs with salt and pepper.


Coat tomatoes in egg then coat with breadcrumbs.


Heat a large cast iron skillet over medium-high heat until lightly smoking hot. Coat the bottom of the pan generously with oil. Fry tomatoes until golden brown on both sides then place on a sheet tray.


Turn the broiler on and spoon a generous dollop of pimento cheese onto the center each Fried Green Tomato.


Broil until the cheese melts then serve.
