Make it Monday #7: 15 Minute Flare Free Sheet Tray Pesto Shrimp Pasta

My freezer is finally cleared out and ready for garden produce this summer thanks to this recipe! I used the last of last summer's pesto to make this delicious shrimp pesto pasta and it came together so quickly, I just had to share it with you today for Make it Monday!


Thanks to the broiler and these incredible no-cook, low-carb Miracle Noodles, you can get this meal on the table for your family in 15 minutes!



FLARE FREE SHEET TRAY PESTO SHRIMP PASTA:

(c=cup; t=teaspoon; T=tablespoon)

Serves 4


INGREDIENTS:


1/2 lg. zucchini, chopped

1/2 pint of organic cherry tomatoes, halved

2 pads of organic soy-free vegan butter

1 c Flare Free Kale Pesto ~1/3 c filtered water

2 bags of Miracle Noodles, rinsed

1 1/2 lbs. peeled and deveined wild shrimp

Sea salt and black pepper to taste

Optional: minced parsley for garnish


INSTRUCTIONS:


1.) Turn broiler on high (500°F) and preheat a large skillet for the pasta. Spray a sheet tray lightly with avocado oil. Add zucchini and tomatoes. Spray veggies lightly with avocado oil then season with salt and pepper.


2.) Broil as close to the heat source as you are comfortable with (I broiled this on the top shelf of the broiler) for about 4-5 minutes until nearly tender.


3.) While that's cooking, turn the heat up to medium/medium-high on your skillet then add the butter and pesto. Thin out with water and cook, mixing often, until it comes into a sauce.


4.) Turn heat down to medium-low then add your Miracle Noodles. Mix well to coat then season to taste with salt and pepper and let warm through while you cook your shrimp.


5.) Add the shrimp to the sheet tray and spray lightly with avocado oil. Season shrimp with Flare Free Spice Blend and salt and pepper then broil for about 2-3 minutes then mix to combine and continue cooking until bright pink and cooked through (about another minute).


6.) Add to pasta and toss to coat then taste and adjust seasoning and serve with parsley if using.
