Got more peppers coming out of the garden than you can eat?
You can freeze them whole (unwashed but dry) to pull out and use for soups, stews, etc. or dehydrate them and turn them into homemade paprika!
HOMEMADE PAPRIKA RECIPE:
Makes 3 oz.
YOU'LL NEED:
~6 c ripe sweet red bell peppers, cleaned and laid out to dry
Clean, dry 4 oz. Mason jar with a lid
INSTRUCTIONS:
Remove the stems and seeds of your bell peppers and cut in half (if using small snacking peppers) or cut into 2" cubes.
Spread out onto your dehydrator and dehydrate for about 8-10 hours until completely dry.
Add to a blender and puree on high until ground up into a powder.
Store in a mason jar in a dark cool place and use in sauces, soups, stews, dry rubs, etc.
This would make an EXCELLENT Beef Paprikash!
