This recipe was requested by Margaret inside The Flare Free Meal Prep Solution as a topping for our Green Goddess Salad with Salmon recipe.
Crispy chickpeas are a great protein and fiber-packed substitute for croutons on salads and on top of soups, or just as a snack!
You can buy these ready-made at almost any store nowadays, and I share my favorite brands inside the Flare Free Pantry Makeover Mini Course, but if you have a can of chickpeas and a few ordinary pantry ingredients kicking around, you can make your own for a FRACTION of the price of the ready-made versions.
Plus! You can cook yours in a good-quality anti-inflammatory oil like avocado oil.
A simple way to get more inflammation-fighting omega 3s, polyphenols, antioxidants and vitamins into your diet!
Hope you enjoy these, Margaret! Thanks for the recipe request!!

FLARE FREE CRISPY CHICKPEAS
INGREDIENTS:
1 can of organic chickpeas, drained and rinsed
Avocado oil spray
Optional: any dried hers and spices you like (IE: Flare Free Spice Blend)
Fine sea salt and finely ground black pepper
INSTRUCTIONS:
Preheat the oven to 400°F / 200°C and line a baking sheet with unbleached parchment paper.
Pat chickpeas dry with paper towels then season generously with salt, pepper, and dried spices/herbs if using, then spray well with avocado oil.
Bake on the middle rack of the oven for about 60 minutes until golden brown and crispy on all sides (mixing a few times along the way).
Let cool completely then store in an air tight container at room temperature.
xo,
Laura
