Dairy-Free Yogurt Marinated Grilled Chicken

I made these for my clients this week and they were šŸ”„šŸ”„šŸ”„ so I wanted to share them with you!

I served these with Rosemary Lemon Potato Wedges and a side Greek Salad with Vegan Feta and omg... DELISH!!

A definite must-try!

Ā 

This recipe utilizes my favorite dairy-free yogurt - Cocojune. It's thick. It's creamy. It's plain and unsweetened. Perfect for savory cooking.



DAIRY-FREE YOGURT MARINATED GRILLED CHICKEN

Ā 

INGREDIENTS:Ā 

1 sm. container of Coojune plain unsweetened soy-free vegan yogurt

1/2 Tbsp. organic paprika

1 tsp. organic smoked paprika

1 tsp. dried oregano

1/2 tsp. garlic powder

1/2 tsp. onion powder

1 1/2 lbs. organic boneless/skinless chicken thighs, tenderloins, or cutlets

Sea salt and black pepper

Spray avocado oil

INSTRUCTIONS:


Place yogurt and next 5 ingredients in a medium mixing bowl. Season to taste with salt and pepper then mix to combine. Taste and adjust seasoining by adding anything you'd like to taste more of.


Add chicken and mix to coat. Let marinate at room temperature for 20 minutes while you heat the grill.


Remove chicken from marinade and spray with avocado oil. Season lightly with salt and pepper then grill over medium heat until cooked through to 165°F.


(About 10 minutes per side for thighs; 4-5 minutes per side for tenders; 2-4 minutes per side for cutlets.)


Serve with Rosemary Lemon Potato Wedges and Greek Side Salad with vegan feta!


NOTE: If you like it spicy like we do, add cayenne pepper to your marinade!!
