OSSO BUCCO POT ROAST RECIPE

(c=cup; t=teaspoon; T=tablespoon)

Serves 4


INGREDIENTS:


  • Couple spoonfuls of organic grass-fed ghee

  • 3-4 lg. organic grass-fed chuck roast

  • 1 lg. onion, chunked

  • 4 lg. carrots, chunked

  • 4 stalks of celery, chunked

  • 12 cloves of peeled garlic, smashed

  • Couple bay leaves

  • 28 oz. organic crushed tomatoes from a BPA free can, box or jar

  • Glug of organic red wine

  • Filtered water as needed

  • Sea salt and black pepper to taste


INSTRUCTIONS:


  •  Place chuck roast and next 7 ingredients in a large crock pot. Add water until liquids come halfway up the roast then season well with salt and pepper. 

  •  Cover and cook on high for about 6 hours until tender. 

  • Serve over Brown Rice Polenta from the March Meal Plan or the Garlic Mashed Potatoes from the November Meal Plan!

3-4 lbs. of chuck roast. Sorry I never saw this comment! Not sure why my website doesn't alert me of this. Editing that error in the recipe now.

Hi. What are you doing with the ghee? Letting it melt in the crockpot or using it to brown the meat. Thank you.

Hi sorry for the late response. I don't know how I missed this comment. It just goes in the crock pot. I'm personally not a fan of having to brown meat in a separate pot before using the crock pot. My crock pot doesn't get hot enough to brown anything. But you could certainly do it either way!! Great question.
