OSSO BUCCO POT ROAST RECIPE
(c=cup; t=teaspoon; T=tablespoon)
Couple spoonfuls of organic grass-fed ghee
3-4 lg. organic grass-fed chuck roast
1 lg. onion, chunked
4 lg. carrots, chunked
4 stalks of celery, chunked
12 cloves of peeled garlic, smashed
Couple bay leaves
28 oz. organic crushed tomatoes from a BPA free can, box or jar
Glug of organic red wine
Filtered water as needed
Sea salt and black pepper to taste
Place chuck roast and next 7 ingredients in a large crock pot. Add water until liquids come halfway up the roast then season well with salt and pepper.
Cover and cook on high for about 6 hours until tender.
