Lazy Flare Free Sheet Tray Greek Chicken + Potatoes Recipe

I made this dish for my personal holistic chef clients last week and it was so simple and so delicious, I had to make it for my family at home as well. I just LOVE Greek food! (But honestly don't eat it enough.)


It came out soooo delectable I just HAD share it with you as well!


We served this with a Greek Cucumber + Tomato Salad that was the perfect complement to the dish! Highly recommend!!



LAZY FLARE FREE SHEET TRAY GREEK CHICKEN + POTATOES

(c=cup; t=teaspoon; T=tablespoon)

Serves 4


Prep Time: 10 Mins | Cook Time: 1 Hour 10 Mins


INGREDIENTS:


7 medium-large Yukon Gold potatoes, quartered lengthwise

1 lg. lemon, juiced

2 c organic no sugar added chicken bone broth

4 lg. cloves of garlic, minced

1 T dried oregano

1 whole organic or pasture raised chicken, at room temperature

Optional: Flare Free Spice Blend and organic dried paprika to taste

Optional: Organic grass-fed ghee

Sea salt and black pepper to taste


INSTRUCTIONS:


Preheat oven to 350°F/175°C and line a baking sheet with unbleached parchment paper or a silicone baking sheet.


Evenly arrange potatoes on the sheet tray then sprinkle with lemon juice, broth, garlic and oregano. Season with salt and pepper.


Place chicken on top of potatoes and season well with salt and pepper and dried spices if using. Drizzle with ghee if using then spray chicken and potatoes with avocado oil.


Roast on the middle rack of the oven for 1 hour.


Turn heat to 450°F/230°C and cook on the shelf that's closest to the heat source for about another 10-15 minutes until internal temperature of the chicken reaches 165°F/75°C and the potatoes are tender on the inside but slightly crispy on the outside.


Serve with pan drippings and your favorite Greek salad!
