Gluten/Dairy-Free Alfredo Pasta Recipe

I had a super busy day today as I was preparing for part 1 of my live 2-part summer workshop happening tomorrow, but I wanted to take some time to show up on social media to show you in real time, what it looks like to prioritize your health and wellness even on the busiest of days.


So you could see that:


  • Healthy eating doesn’t have to be complicated


  • Healthy eating doesn’t have to be gourmet (it just has to be something you know you’ll like)

Healthy cooking doesn’t have to take all day


  • Even on your busiest days…if you have the right ingredients stocked in your pantry and fridge at all times…you can whip up something quick and easy but delicious so the whole family can sit down and eat together.

GLUTEN/DAIRY-FREE ALFREDO PASTA RECIPE

INGREDIENTS:


Organic extra virgin olive oil

1/4 c diced onion (I used some leftovers I had in the freezer)

3-4 lg. cloves of garlic, minced

1 cont. Silk Dairy-Free Heavy Whipping Cream

Sea salt and black pepper to taste (don’t be shy!)

Optional: grated Violife vegan parm

1 box of Jovial Organic Brown Rice Tagliatelle, cooked according to package instructions


INSTRUCTIONS:


1.) Heat a sauté pan over medium heat. Coat with oil then add onions and garlic. Add a pinch of salt and pepper and sauté until onions are translucent (but not brown).


2.) Add dairy-free cream and simmer while the pasta cooks.


3.) Taste and adjust seasoning by adding more salt and pepper as needed.

4.) Once the pasta is al dente, add it to the cream sauce and stir to combine. NOTE: “Al dente” means “to the tooth” - meaning the pasta isn’t entirely cooked through. It’s tender yet still a little firm inside. The reason pasta is cooked to “al dente” in Italian tradition is because it requires more chewing which can help you digest the pasta better and prevent a large blood sugar spike.


5.) Taste and adjust seasoning, then serve with your favorite protein and side veggies!
