4 Super Easy One Pot Recipes to Throw on the Stove Leading up to Thanksgiving

In a couple of days you're going to be standing over the stove all day long, playing Tetris in the oven and juggling a thousand things to time it all just right.


You'll be shopping and prepping in the lead up to it all and you may be thinking...


I can't imagine making one more meal right now.


But, you gotta eat.


So make your life easy and throw one of these simple One Pot Meals on the stove (or crockpot) and walk away.


Feel free to double the recipe so you have dinner and lunch for a couple days!


PUMPKIN POT ROAST (FROM THE NOVEMBER MEAL PLAN)












CROCK POT CREAMY CHICKEN 'N RICE SOUP




INGREDIENTS:

2T garlic oil 4 organic chicken breasts

1/2 container of pre-diced onion

1/3 bag of baby carrots

1 1/2 c pre-chopped or frozen veg

2 qts. organic chicken broth

1/2 c organic brown basmati rice

2 T organic soy-free vegan butter

2 c unsweetened soy-free plant milk

Sea salt and black pepper to taste

(Optional: minced parsley or organic kale for garnish)

INSTRUCTIONS:


Place first 7 ingredients in crock pot. Season generously with salt and pepper then set crock pot to high. Cover and cook for 4 hours.


Remove chicken from the pot and shred with two forks on a cutting board. Return chicken to the crock pot and add rice and butter then stir to combine. Cover and cook for another 2 hours.


Stir in milk until creamy then taste and adjust seasoning by adding more salt or pepper and serve.
