4 organic boneless skinless chicken breasts, at room temp
½ small onion, diced small
8 cloves of garlic, sliced thin
6 extra large ripe strawberries, chopped
3 T local or organic raw honey
3 T of Miyoko’s Vegan Cultured Butter
½ c white balsamic vinegar or any vinegar you have
Sea salt and black pepper to taste
Preheat oven to 425°F.
Place chicken in an oven safe baking dish and top with remaining ingredients. Season to taste with salt and pepper then top with remaining ingredients and bake until chicken is cooked through (internal temperature will read 165°F), basting twice with the sauce as it cooks (about 25-35 minutes).
Serve with your favorite veggies, pasta, salads, etc.!
