Gluten + Dairy Free Cheesy Toast with Bruschetta Topping Recipe

INGREDIENTS:


2 T finely minced garlic

2 T finely minced parsley

4 T Miyoko's Vegan Butter

Vegan Shredded Mozzarella to taste

Spray avocado oil

2 large ripe organic Roma tomatoes, diced

3 lg fresh basil leaves, sliced into thin ribbons

Organic white balsamic vinegar to taste

Organic extra virgin olive oil to taste

Sea salt to taste INSTRUCTIONS:


Place first three ingredients in a small bowl and mix well to combine. Spread onto sliced baguette and top with shredded vegan mozzarella. Spray with avocado oil and broil for 8 minutes until cheese melts and toasts are crispy.


Place diced tomatoes and fresh basil in a medium bowl. Season to taste with balsamic vinegar, oil and salt and mix well to combine. Taste and adjust seasoning then serve atop "cheesy" toasts.


NOTE: Skip the cheese for a traditional bruschetta if you're pairing this with my Flare Free Zucchini Lasagna.
